Grapefruit is one of the main fruit resources in China,and it takes about the fruit weight of about 45%,peel is rich in dietary fiber and other bioactive substances. Therefore,extraction of dietary fiber can change waste into treasure with shaddock peel,has the very good practical value. This paper compares the chemical separation method,ultrasonic assisted extraction of soluble dietary fiber from pomelo peel and ethanol precipitation method, enzyme combined with chemical extraction of insoluble dietary fiber from shaddock peel,and the membrane separation method and fermentation method applies to peel dietary fiber utilization prospect,provides certain reference for dietary fiber from pomelo peel depth extraction.
