In order to analyze the changes of the chemical constituents and fragrance quality,this study obtains the essential oil of lotus germ by extracting lotus germ with supercritical carbon dioxide. The experimental is conducted in 120,130,140 and 150 ℃ for 30 min separately. The untreated sample and samples after high temperature processed are analyzed by GC- MS,chromatographic column is 30.0 m×250 μm×0.25 μm,flow rate of carrier gas is 0.9 m L/min,range of scanning is 40~450 amu. The results show that composition difference are significant change with the increase in treatment temperature and a good result of relatively stable odor and chemical constituents is obtained by 120 ℃ processing.
