Conocidos resultan el clima y la flora xerofila de la region del valle de Tehuacan-Cuicatlan; especialmente el de la sajadura o sima compartida por los estados de Puebla y Oaxaca denominada La Canada. En estas lineas se pretende esbozar o solo apuntar tambien su tipificacion en funcion del papel historico desempenado por una agroindustria afincada en esa, la azucarera. Ello a partir de material proveniente, o conexo, a un trapiche/ingenio azucarero de larga vida (300 anos): San Nicolas, e inserto en el entonces novohispano partido y alcaldia mayor de Teotitlan del Camino Real, obispado de Oaxaca
