Consumer interest in foods enriched in n-3 long-chain polyunsaturated fatty acid (LCPUFA) has created an opportunity for the egg industry to provide shell eggs and egg products that are naturally enriched in these important fatty acids. The use of both plant- and marine-derived n-3 fatty acids in the diet of laying hens can lead to significant accumulations of both total n-3 and the n-3 LCPUFA (docosahexaenoic and eicosapentaenoic acid; DHA and EPA) in table eggs. The final composition of the n-3 fatty acid profile of eggs will depend on the balance of alpha-linolenic acid (plant-derived) and DHA/EPA (marine-derived) provided in the diet, as well as other factors including the usage of novel ingredients that provide unique fatty acids (i.e. stearidonic acid). Acceptability by consumers will ultimately depend on their knowledge of the role of specific fatty acids in the promotion of optimal health, and the extent to which enriched eggs maintain the flavour, aroma, taste and functionality of conventional eggs.
