Les recherches en sciences sociales ont multiplié des définitions plutôt hétérogènes du tourisme gourmand, et ce, dans une perspective théorique, basée sur l’analyse de l’offre plus que sur celle de ses pratiques sociales. L’objet de cet article est de tenter de mieux cerner, à travers les résultats d’une enquête socioculturelle menée en Amérique du Nord, les pratiques, les horizons d’attente et les représentations que les touristes provenant des marchés de proximité du Québec se font du tourisme gourmand et, plus particulièrement, de l’offre touristique gourmande québécoise. Il met en évidence les écarts qui existent entre les perceptions et les attentes de la clientèle et les représentations académiques, mais aussi marketing et communicationnelles du phénomène.
