Abstract
Food insecurity is on the rise worldwide and within Canada due to a myriad of factors such as climatic instability, rising food prices and unsustainable food production practices. As a result of how the food system is operating there are increasing inequities and imbalances, which shift the supply of and demand for food. Education is viewed as the way to increase knowledge and awareness, and foster new ways of thinking and engaging with food premised on just and sustainable food systems. As such, this paper is situated within the field of environmental education, and forms part of a larger study exploring how to integrate the topic of food security in education. Analyzing Ontario Ministry of education curriculum documents, this paper illustrates the extent and manner in which descriptions of food security are presented.
