La produccion y comercializacion de productos organicos han experimentado un crecimiento exponencial a nivel mundial durante la ultima decada del siglo XX. Esta situacion ha sido fomentada principalmente por tres aspectos: crecimiento de la oferta y la demanda, sobreprecio pagados por los productos organicos en los paises industrializados y desarrollo de diferentes sistemas regulatorios. El crecimiento de la demanda se debe basicamente al cambio de la consciencia mundial sobre el deterioro del medio ambiente, a perdida de biodiversidad, los problemas de salud y las injusticias sociales en los tradicionales sistemas de comercializacion de productos basicos. Esto ha generado nichos de mercado para productos tales como el cacao y banano producidos y/o procesados bajo tecnicas organicas y/o bajo la modalidad de comercio justo, proporcionando sobreprecios siempre y cuando estos productos sean certificados bajo sistemas internacionalmente acreditados. En el 2001,el cacao y banano organico representaron el 0,3 y 0,1 por ciento, respectivamente, de la produccion total de cacao y banano a nivel mundial. {DA}ltimamente, la progresiva saturacion de los mercados para el cacao y banano organico ha conducido a una reduccion de los sobreprecios en ambos productos, lo que disminuye los incen tivos para convertir a o mantener la produccion organica.
