RESUMENEn Sudamérica se encuentra el país Ecuador, donde se sitúa la ciudad de Guayaquil. Los restaurantes denominados Las Huecas son establecimientos de expendio de comida típica ecuatoriana, muy visitados por turistas nacionales e extranjeros. El presente trabajo empírico basado en un análisis univariante y bivariante de encuestas intenta estudiar las características del perfil de los visitantes a estos establecimientos de alimentos y bebidas, con sus preferencias gastronómicas. La investigación se realizó in situ, para luego mostrar los resultados, los cuales evidencian que a las huecas concurren hombres y mujeres, en su mayoría entre 20 y 39 años de edad, con profesiones variadas, que prefieren ir los fines de semana, en la mañana o en la noche y entre sus preferencias gastronómicas principalmente se encuentran el encebollado, los ceviches y el arroz con menestra.PALABRAS CLAVETurismo Culinario. The restaurants called as The Huecas [Las Huecas] are establishments that sell Ecuadorian typical food, very visited by national and international tourists. The present empirical work is based on univariate and bivariate survey analysis to study the visitors profile in relation to these food and beverage establishments, with their gastronomic preferences.
