RENDIMENTO DOS CORTES COMERCIAIS DA CARCAÇA DE VACAS DE DESCARTE E DE NOVILHOS INTEIROS NELORE, TERMINADOS EM Brachiaria decumbens

Abstract

Utilizou-se 14 animais provenientes do rebanho do Instituto de Zootecnia da UFRRJ, sendo 07 vacas Nelore de descarte (VD) e 07 novilhos Nelore inteiros (NI), terminados em pastagens diferidas de Brachiaria decumbens. Os animais pesavam cerca de 300 kg de peso vivo em jejum (PV), idade entre 18-19 meses para NI e aproximadamente 08 anos para VD, foram abatidos com 378,85 e 360,28 kg de PV, respectivamente. As VD foram desmamadas e encontravam-se vazias, descartadas do rebanho reprodutivo. Para cortes do dianteiro foi detectado maior rendimento de Peito (P<0,05) a favor dos NI em relação às VD, sendo encontrados os valores, 4,87% e 4,44%, respectivamente. Analisando os resultados referentes ao corte serrote, observaram-se semelhanças entre os animais para a maioria dos cortes comerciais mensurados. Entretanto verificou-se superioridade (P<0,05) para o rendimento de Lagarto a favor dos NI (2,78 vs 2,59). Quanto ao rendimento total de carne na carcaça foram encontrados maiores rendimentos (P<0,05) para os NI (73,2%) em relação às VD (71,43%), mas não se observou diferenças significativas (P>0,05) para os rendimentos totais de osso e gordura na carcaça desses animais. Concluiu-se que as duas categorias estudadas apresentaram proporcionalidades semelhantes em relação à distribuição dos cortes comerciais da carcaça.
