Compte-rendu de conférences de la 5ème édition du Symposium international des poudres laitières de Saint -Malo (juin 2012). Au programme, présentation des dernières avancées technologiques et leurs équipementiers en matière de procédés de séchage (combinaison d'un séchage par atomisation précédé par une phase d'extrusion donnant une poudre plus facile à réhydrater), de contrôle des dépenses énergétiques (simulation de la consommation énergétique d'un procédé par outil informatique), de cristallisation du lactose améliorant le séchage des lactosérums, de contrôle en ligne de la qualité des poudres à la sortie de l'enceinte de séchage et d'évaluation des caractéristiques des poudres laitières (granulométrie, comportement face aux cisaillements)
