Abstract
En base a: - La información disponible sobre la baja biodisponibilidad de la mayoría de los péptidos en condiciones fisiológicas debido a su reducida absorción y rápida eliminación, consecuencia de los procesos de ingestión, digestión y absorción; - La relevancia que tendría disponer de conocimientos relacionados con la estabilidad de péptidos bioactivos durante el transporte gastrointestinal para el desarrollo de ingredientes y/o alimentos funcionales con efectos en la salud del consumidor; se propone como objetivo general del presente trabajo de tesis: - Desarrollar sistemas transportadores de péptidos bioactivos que mejoren su biodisponibilidad sin afectar su actividad fisiológica y desarrollar una matriz alimentaria formulada a base de amaranto con actividad funcional.
