Applications of Nanostructured and Microstructured Materials in Postharvest Packaging of Fresh Fruits and Vegetables

Abstract
This chapter provides an overview of the recent developments in technologies related to active and intelligent packaging, focusing on those related to the exploitation of microstructured and nanostructured materials. In modified atmosphere packaging (MAP), a mixture of gases, instead of air, is sealed within a package to extend the shelf-life of the product. Fibrous non-wovens made from submicron fibers are ideal carriers for preservative agents. Such non-wovens can be produced easily using electrospinning, also known as electrostatic spinning. Ethylene promotes ripening and senescence in fruits. Therefore, during the storage of climacterics, it is desirable to remove the ethylene accumulated within the package headspace to delay product deterioration. The chapter reviews nanomaterial-based indicator systems that are potentially useful for MAP applications. Although nanotechnology holds many promises for the development of innovative packaging for fruits and vegetables, there are some concerns about their potential toxicity due to lack of toxicological data of nanomaterials.
