Objetivo: Expor de forma pormenorizada o protocolo de estudo “Assistência Alimentar e Nutricional em Cuidados Paliativos – Estudo de Caso”. Métodos: Compreender o papel da assistência alimentar e nutricional num serviço de cuidados paliativos e analisar os fatores envolvidos na integração e intervenção dos nutricionistas e de outros profissionais responsáveis pela assistência nutricional neste serviço. Resultados e Conclusão: A descrição e análise das atividades de assistência alimentar e nutricional, geradas no contexto de trabalho de serviços de cuidados paliativos, assumem-se atualmente como uma área central da investigação nutricional em cuidados paliativos.
