Abstract
Det er fremstilt tørt fiskemuskelprotein i pilotskala. Mesteparten av fettet ble fjernet fra proteinet ved etanolekstraksjon. Ved Institutt for Medisinsk Biologi, UiT, er proteinpulveret brukt i fôringsforsøk med rotter for å studere utvikling av hjerte/kar-sykdommer og diabetes II. Det er utført laboratorieforsøk for å utvikle metoder til utvinning og fettekstraksjon av rensede fraksjoner av torskemuskelprotein i pilotskala. De oppnådde resultater viser at både sarcoplasma- og myofibrillfraksjon kan fremstilles ved ekstraksjon av torskemuskel ved hjelp av metoder som lett kan oppskaleres til pilotskala med utstyr som allerede er tilgjengelig i prosesshall ved Nofima Marin i Tromsø. Resultater fra det første fòringsforsøk med rotter ved IMB viste ikke at torskeprotein i fóret bidro til å hindre en diabetes fenotyp mhp hjertets metabolisme. Forsøkene blir imidlertid gjentatt da mye tyder på at fastetiden før fóringsforsøket hadde vært for lang. Fôringsforsøk med rotter er utført ved Laval University, Quebec, men detaljerte resultater er foreløpig ikke mottatt. Det ble ikke oppnådd stor vektøkning hos rottene, slik som forventet, og de fysiologiske testene (bla test for insulinfølsomhet) var vanskelige å tolke. Så snart detaljerte resultater foreligger, vil disse bli ettersendt. Ved en videreføring av prosjektet, der målsetningen er å klarlegge muskelkomponentenes biologiske virkemåte, vil det være naturlig å gjøre dyreforsøk eller humane studier der forskjellige muskelproteinfraksjoner framstilles i pilotskala og inngår i parallelle forsøksserier.
