L'influence de la variété de blé sur la qualité du pain de blé entier a été évaluée. L'objectif ultime était de vérifier l'effet de la composition des fibres alimentaires de quatre variétés de blé du Québec (Brio, Pollet, Barrie et Celtic) sur la qualité du pain de blé entier. Les paramètres étudiés incluaient le volume du pain et la teneur en fibres alimentaires solubles et insolubles (hémicelluloses, cellulose et lignine) des grains, des fractions de mouture (farine blanche, remoulages, son) et du pain blanc ou de blé entier. La variété de blé affectait beaucoup plus le volume du pain de blé entier que celui du pain blanc; cependant, ces différences n'étaient pas causées par la teneur en fibres alimentaires des farines de blé entier. Si le son de blé était très friable ou s'il absorbait peu d'eau, le pain de blé entier était peu volumineux. La teneur en amidon résistant et, dans une moindre mesure, en fibres insolubles de la farine augmentait à la suite de la cuisson du pain.
