Abstract

A produção de alimentos com alto valor agregado, por meio da tecnologia de bioprocessos, se apresenta como um novo desafio que visa atender a um público que possui – ou não – problemas relacionados à saúde, mas prioriza uma alimentação cada vez mais saudável e rica em nutrientes. Visando atender a esses consumidores, a indústria de alimentos passou a agregar ingredientes funcionais para a elaboração de novos produtos alimentícios. O presente artigo teve como objetivo realizar uma revisão de literatura recente a respeito do desenvolvimento de alimentos funcionais. Para isso, um levantamento bibliográfico foi realizado, a partir da análise de artigos científicos disponíveis em diferentes plataformas de busca A literatura nacional e internacional analisada apontou que diversos autores devenvolveram produtos alimentícios a partir da incorporação de diversos ingredientes funcionais como fibras, flavonoides, prebióticos, probióticos e resíduos alimentares, mantendo os padrões de qualidade exigidos pela legislação brasileira. Muitos desses produtos foram aprovados por possíveis futuros consumidores conforme atestaram as análises sensoriais.
