Abstract
Cet article décrit les transformations contemporaines de l’élevage porcin en Roumanie. Il montre comment le sujet culturel qu’est le cochon roumain devient un objet commercial et comment la cosmogonie exprimée lors de la mise à mort du porc dans les basse-cours villageoises se mue en spectacle destiné aux touristes. Je décris les étapes qui président au choix de l’animal mis à mort ainsi que la chaine opératoire d’un abattage de cochon dans une maisnie banataise. Je montre ensuite comment une quadruple pression s’exerce sur les petits paysans roumains et leurs cochons. En effet, l’installation d’un géant de l’agro-industrie porcine dans le Banat confisque non seulement les terres du pourtour villageois, mais aussi un mode de domestication. Par ailleurs, l’imposition des normes sanitaires et de bien-être animal édictées à Bruxelles altèrerait, aux yeux des petits éleveurs roumains, la saveur de la chair porcine. Les discours des défenseurs des droits des animaux renforcent également ces confiscations en dénonçant la barbarie de paysans dits insensibles à la souffrance des animaux abattus de façon « inhumaine ». Enfin, notons que l’annexe B1 de la Directive européenne 93/119/CEE fixe des règles minimales; cependant, un usage rusé de cette règlementation transforme l’abattage du porc en rituel orthodoxe. Il en résulte que la nature profondément signifiante du cochon pour le gospodar est passée sous silence.
