In the present study the phenolics were extracted with 80%acetone and the total phenolics were determined.The antioxidant activities of barley extract in vitro were determine by measuring scavenging effects on the hydroxyl radical and superoxide radical,reducing power,inhibition of rat liver microsome lipid peroxidation.The result showed barley extract exhibited high scavenging effects on the hydroxyl radical and superoxide radical,even more efficient than Trolox;it has effective reducing power and inhibition in lipid peroxidation.All these imply barley extract possess high antioxidation in vitro and these will be helpful to further studies of antioxidative mechanism and extensive use.
