Abstract
In this work a new protocol based on Spectrophotometry and invertase solution for Sucrose quantification is presented. The invertase molecule is used for releasing Glucose and Fructose from Sucrose molecules in maple syrup. Then, Glucose Oxydase (GO), Glucose Peroxydase (GPO), Phenol-4-sulfonic acid and 4-aminoantipyrine molecules are used as the optical marker for Glucose molecules which will form a colored compound. This coloration is measured using Spectrophotometry technique and then Glucose is quantified. Finally a glucose "standard" curve is established after an optimization process of Trinder solution composition (GO, GPO, 4-aminoantipyrine and phenol-4-sulfonic sodium salt), detection limit of Glucose concentration in the sample, reaction times and the used wavelengths for coloration measurement.
