Manger est un geste simple et pourtant fort complexe. Pour l’étudier, le rapport au corps comme celui à l’individu doit être considéré parce que les aliments existent dans cette relation qu’ils ont avec celui ou celle qui mange. Or, la modernité alimentaire a changé notre rapport à l’alimentation, c’est-à-dire que la science a revu notre conception du corps et celui du rôle des aliments. De son côté, la cuisine transforme les aliments pour les rendre mangeables physiquement et culturellement. D’ailleurs, c’est en famille qu’on apprend bien souvent à cuisiner, mais c’est aussi en fonction de ses besoins. La cuisine est un savoir en contexte. Au Québec, au début du siècle, elle est bien modeste et en accord avec les normes alimentaires de l’époque. Ainsi, notre conception d’une cuisine saine est récente. En même temps, notre société moderne et ses avancées nous offrent une pléthore de produits transformés. Elle nous offre les moyens de ne plus cuisiner, d’autant plus que le temps nous manque. Faire la cuisine n’est donc plus une nécessité, ce qui n’est pas sans risque pour notre santé puisque cela sous-entend le recours aux produits très transformés. En outre, le lien se perd avec la pratique culinaire, plusieurs enfants ne savent pas se débrouiller en cuisine parce qu’ils ne l’ont jamais vu. Bien manger n’est pas inné. Dès lors, dans la société d’aujourd’hui les nutritionnistes ont un rôle important à jouer pour aider tout le monde à faire de bons choix.
