Abstract
Access to information about diet properties and the contamination generated from the production of certain foods, has sparked a special interest in products of plant based that can substitute macronutrients from animals. Thus, for the last 10 years, veganism or plant-based diet has taken on great relevance in European and North American countries. Regarding the customer, Canada is a country with open markets and a growing demand for consumption based on organic and plant-based products as a substitute for animal products, and it should also be borne in mind that the market segment for this project are people between 24 and 39 years old with a high purchasing power, then USD 7.80, is considered adequate in view that chocho sausage is a differentiated and with unique properties. When carrying out the financial evaluation of the project, it can be observed that the internal rate of return of investors is 44.57 percent, which represents a significant opportunity cost.
