Abstract
Il existe deux langages concernant les questions environnementales de même que celles liées au développement. Si le langage occidental renvoie au paradigme de la modernité et à l’anthropocentrisme, le langage japonais se fonde sur une conception du monde selon laquelle l’Homme est en relation continue avec l’ensemble du monde humain et non-humain. Cet article s’intéresse à la contribution du savoir japonais à l’éducation relative à l’environnement - par-delà les enjeux soulevés en Occident - et propose l’élargissement du cadre éthique qui fonde le rapport à l’environnement en vue d’une meilleure contribution au développement global de la personne. Des entretiens menés avec des diététiciennes scolaires au Japon nous permettent d’éclairer les deux aspects suivants : la transmission du savoir inochi (traduite par vie en français) et la dimension collective et personnelle de la construction du rapport à l’environnement et plus spécifiquement, à l’aliment.
