Abstract
L'encolure, l'epaule, le flanc et la cuisse de 36 carcasses bovines et de 30 carcasses ovines ont ete ecouvillonnees aux fins d'analyses bacteriologiques. L'encolure a presente les charges microbiennes lesplus importantes. Les moyennes de la flore analysee pour ce site ont indique que les niveaux de contamination etaient superieurs a ceux observes dans des etudes similaires realisees en France, en Tunisie et Maroc.
