Abstract

fetched live from OpenAlex

Publisher Summary Microencapsulation is the technology of packaging solid, liquid and gaseous materials in miniature sealed capsules that release their contents at controlled rates over prolonged periods of time under the influence of certain processing and environmental triggers. The industrial production of foods often requires the addition of ingredients, which are used to control flavor, color, texture and preservation. There are many instances where it is advantageous to encapsulate ingredients. Controlled release of flavors is a particularly important advantage of encapsulation. Such a goal can be achieved by enabling the release of ingredients with matrixes having variable diffusion or degradation properties, as well as release by swelling or melting. This chapter examines encapsulation technologies applied to bioactives added to dairy products, and why encapsulation can be useful. Since probiotics have been at the forefront of the development of functional dairy products, emphasis will be made on these ‘bioactive ingredients'.

Not calibrated prevalence, not ground truth. Human validation pending. The Gemma side is a direct model label for every work in the frame, read from the title-only record. The Codex side is a classifier learned from the 10,348 direct Codex labels and calibrated to design-weighted sample rates; fields without enough sample support carry no Codex call. Candidate is the union of the two sides; consensus is their intersection. These outputs are machine_predicted_unvalidated and are not human labels.

Machine scores (provisional)

The two teacher heads of the student model, read on this work. A score orders the frame for review; it never asserts a category, and the validation status ships verbatim with every row.

Baseline scores from an immature model (maturity gate not passed, 7 training rounds). Scores rank; they never assert a category.
