Du fait de la mondialisation spéculative des marchés agricoles, une production supérieure de 3 % à la demande solvable pour des denrées comme le blé, le lait de vache ou certaines viandes peut faire baisser les prix agricoles de 30 % et plus. Mais un risque de pénurie peut les multiplier par deux ou trois en quelques semaines. En ce début de xxi e siècle, la planète alimentaire manque cruellement de politiques de régulation. Il devient criminel de soumettre le droit des peuples de se nourrir à la roulette russe qu’est devenue la spéculation. Surtout que le réchauffement climatique perturbera de plus en plus souvent la production agricole mondiale.`
