Detection and characterization of Bacillus cereus and its spores in raw and pasteurized milk

Abstract
A total of 660 pasteurized milk samples were obtained from 22 Ontario dairy plants between November 1999 and March 2000. The incidence of psychrotrophic ' B. cereus' was 6.3% after incubation at 7°C for 14 days and 43.6% after incubation at 10°C for 7 days. Growth of isolates obtained from 10°C incubation suggested that enumeration of psychrotrophic ' B. cereus' can be possible using the shorter incubation period. Presence of 'B. cereus' in the milk supply of one dairy was investigated in detail. Raw milk samples from bulk tanks (68), delivery trucks (6) and silo (4), as well as pasteurized milk (4) and environmental swabs (11) were tested. The average 'B. cereus' spore counts/60 mL of milk were 7.2, 101 and 87 for bulk tank, delivery truck and silo tank, respectively. The results suggested that hygiene procedures are crucial to reduce 'B. cereus' spore contamination in raw milk.
