Abstract
Ce mémoire propose une réflexion anthropologique sur le cas du mouvement social Slow Food et de son développement à Montréal comme illustration des transformations dans la culture alimentaire québécoise. Que signifie l'émergence de Slow Food à Montréal? Le mouvement global est étudié à l'intérieur du cadre de la modernité alimentaire. Plus spécifiquement, trois concepts liés à la modernité alimentaire sont explorés: la ±délocalisation» de la production et de la distribution, la ±déstructuration» des pratiques alimentaires et le phénomène gastronomique du terroir. La recherche, qui s'est déroulée sur le terrain des activités du mouvement Slow Food Québec à Montréal, examine comment une couche particulière de la population montréalaise interprète les transformations survenues au sein de la culture alimentaire québécoise.
