Les habitudes alimentaires peuvent grandement influencer la santé des personnes, mais également celle de la planète. En effet, le secteur de la production alimentaire serait responsable dans une large proportion des émissions de gaz à effet de serre d’origine humaine. Pour encourager des choix alimentaires sains et durables par la population, des stratégies informationnelles (comme l’affichage de logos) sont des outils communément utilisés. Cependant, les informations nutritionnelles et environnementales influencent-elles les comportements d’achat des consommateurs? Les diététistes/nutritionnistes pourraient favoriser l’adoption d’une alimentation saine et écoresponsable, ces deux caractéristiques étant fortement interreliées. Les décisions alimentaires individuelles ne sont pas toujours objectives; elles peuvent être grandement influencées par des facteurs individuels ou externes. La transmission d’informations fait partie des interventions grandement utilisées pour susciter des changements de comportements. L’information nutritionnelle qualitative et interprétative aide les individus à faire des choix plus sains lorsqu’ils mangent à l’extérieur de la maison, particulièrement en milieux institutionnels (p. ex. dans les cafétérias d’hôpitaux ou d’établissements scolaires). Il en va de même pour l’information sur l’empreinte carbone des repas, où les étiquettes de type feux de circulation suscitent des changements modestes, mais significatifs vers des choix plus écoresponsables. Lorsque ces deux types d’informations sont combinés, ils favoriseraient des choix plus sains et écoresponsables. La combinaison des deux types d’information représente donc une avenue prometteuse pour donner aux consommateurs les moyens d’action pour améliorer leurs choix alimentaires. La participation des diététistes/nutritionnistes de tous les champs de pratique est primordiale pour encourager ces changements de comportement.
