Abstract
Le présent commentaire sur les maladies infectieuses en pédiatrie vise à fournir une orientation pratique aux médecins qui conseillent des patients au sujet de la salubrité des aliments [1]. La salubrité des aliments est devenue un enjeu de santé publique important en Amérique du Nord. Un système sentinelle de surveillance des maladies d’origine alimentaire existe aux États-Unis depuis 1996 [2], et un système similaire a récemment été mis en place au Canada [3]. Ces dernières années aux États-Unis, on a constaté une diminution importante de l’incidence de plusieurs infections d’origine alimentaire, peut-être attribuable à l’adoption d’initiatives de salubrité [4]–[6]. Le nombre de cas déclarés d’infections entériques, dont la plupart sont d’origine alimentaire, a augmenté dans de nombreux pays dans les années 1990 [7]–[10]. De nouveaux pathogènes (Cryptosporidium, Cyclospora, calicivirus et norovirus) ont émergé ou leur origine alimentaire a été établie [5],[8],[10]. De plus, la population de patients immunocompromis hautement susceptibles aux pathogènes entériques a augmenté [11],[12].
