Abstract

 Este trabajo se basa en la producción y comercialización de Hidromiel, bebida ancestral consumida por algunos pueblos antiguos de Europa, entre los cuales se encuentran los siguientes: griegos, celtas, sajones.
 En el proceso de producción, las materias primas utilizadas se caracterizan por ser cultivadas netamente en el departamento de Nariño, como es el caso de la mora, la cual se obtiene a través de microproductores agrícolas del Encano; por su parte, la miel se adquiere de un apiario ubicado en el municipio de Buesaco, dichas materias primas se mezclan con otros ingredientes para que sean aprovechadas las vitaminas y demás propiedades. Luego se lleva a cabo un proceso de fermentación alcohólica en la miel de abejas, al pasar por esta fase, se conserva atributos tales como: sabor y aroma a mora, pues este último es el componente principal de innovación en la preparación de este hidromiel.
