Abstract
Food allergy is an immune system-mediated adverse reaction to food proteins that can affect multiple organs. Fatal anaphylactic reactions to foods have been reported from multiple locations throughout the world, including the United States and Europe. Food allergies affect an estimated 3%–6% of children in the United States, with similar prevalence estimates from Europe, Canada, Australia, and China. Risk factors for developing food allergy include a family history of atopic disorders with environmental factors seemingly modulating the expression of food allergies. Food allergens, found in plants and animals, are classified according to their biologic function or protein family group. Any food that contains native or denatured milk proteins or fragments derived thereof may trigger an allergic reaction. Tree nuts cause food allergic reactions in both children and adults. Wheat and other cereal grains are common food allergens, particularly in children.
