El objetivo del presente trabajo fue determinar el mejor solvente de extracción de antocianinas de los frutos de B. humbertiana y B. boliviana y evaluar el pH, color y actividad antioxidante de los yogures a los cuales se incorporó el extracto liofilizado de ambas especies. La extracción de las antocianinas se realizó con solventes de grado alimentario como etanol y agua acidificados con ácido cítrico. Los extractos etanólicos 96 acidificados con ácido cítrico (pH 3,5) y liofilizados de ambas especies de berberis fueron incorporados a muestras de yogurt comercial a las concentraciones de 80 y 100 mg/50 g de yogurt, determinándose que mantienen el pH ácido, logran una coloración muy similar a los yogures comerciales con una diferencia global de color (ΔE) menor a 10 y tienen mayor actividad antioxidante.
