Cet article se propose d’analyser les duelos y quebrantos (œufs au lard) qui font partie du menu de l’hidalgo Alonso Quijano, à la lumière des livres de cuisine, des dictionnaires et des traductions d’époque. Par ailleurs, il s’agit de mettre en évidence le lien qui existe entre le héros du Don Quichotte de Cervantès et Antón de Montoro, alias « el Ropero », poète andalou du xve siècle d’origine judéo-converse.
