In both academic research and industry practice, drying is often viewed as independent unit operation (UO), separated from the other pre-drying (washing, peeling, slicing, chemical and thermal pre-treatment) and postdrying (packaging, storage) operations.However, there is extensive evidence of the cumulative effects of UOs surrounding conventional drying processes on both product quality and resource usage.We propose new systematic approach to optimization of the entire food manufacturing system as a conceptual framework for intelligent drying.This approach includes development of process and product models, data analysis and process control, based on digital twins of the product and technological environment.These digital representations would require integration of realtime measurements of product core attributes, using non-invasive real time sensing.In this context computer vision, hyper spectral imaging (HSI) and other non-invasive techniques, such as electronic nose and tongue has proved to be extremely beneficial .
