Abstract

Air drying kinetics of potato skin samples (1-mm thickness) was mathematically described with different mass transfer models (internal, external, and mixed). Drying curves at different operating conditions were fitted with an exponential decay equation. Results showed that the rate parameter of the fitted equation significantly depends on both air temperature and velocity. Mass transfer coefficients for single slabs were predicted as a function of air velocity and temperature from a mass/heat transfer analogy equation and the Lewis number. In conclusion, pure internal control for mass transfer does not describe mass transfer mechanism for potato skin drying kinetics.
