To overcome some of the limitations of conductive hydro-drying method, the new patented combined ultrasound and infrared assisted conductive hydro drying (UIACHD) was designed and fabricated. Three case studies were conducted on the new dryer to evaluate its functionality. Apple and okra slices and potato puree were dried using this dryer. The physicochemical quality of the dried apple and okra slices including color and vitamin C content was compared with fresh and freeze-dried products. The effects of drying methods on resistant and digestible starch content of cooked potatoes were also investigated. These studies showed the potential of UIACHD in drying heat sensitive food materials as a high quality and energy-efficient drying method.
