Abstract
Cet article s’efforce de dresser un bilan de la connaissance sur les productions agricoles et artisanales des établissements ruraux en Corrèze durant l’Antiquité. Le plan de certains bâtiments peut être comparé à ceux identifiés comme des fermes-étables ou des bergeries, même si les preuves décisives manquent. Les études réalisées sur les sites archéologiques suggèrent, pour l’heure, une culture importante de l’avoine, de l’orge vêtue et de l’orge en Corrèze, ainsi qu’un développement déjà prégnant de la vigne dans l’ouest du Département. Dans une moindre mesure, ces études attestent la présence de l’amidonnier, du froment, de la féverole et de l’épeautre, mais aussi de la noix bien que la palynologie suppose une culture du noyer plus tardive. Au niveau des productions artisanales, il n’existe en revanche pas actuellement de site fouillé permettant de les caractériser formellement.
