Abstract
Pengaruh tepung beras dan maizena pada pembuatan kacang disko telah dikaji melalui variasikomposisi penyalut (terigu: maizena: tepung beras), yaitu A (50 persen: 37,5 persen: 12,5 persen), B(50 persen: 25 persen: 25 persen), dan C (50 persen: 12,5 persen: 37,5 persen). Selanjutnya, dilakukankarakterisasi kimia, sensoris, dan fisik terhadap kacang disko. Dilakukan juga uji water absorption capacity(WAC), oil absorption capacity (OAC), serta sifat pasting tepung penyalut. Penelitian menunjukkanbahwa seluruh formula menghasilkan tingkat kesukaan sensoris yang sama. Dari sisi tekstur, formula Amenghasilkan crispness terbesar dan F break terkecil. Sementara, kedua parameter tersebut sama untukformula B dan C. Formula A memiliki fracture yang lebih kecil dari formula C, walaupun tidak berbeda nyatadengan formula B. Kadar abu, protein, dan lemak tertinggi dihasilkan oleh formula C. Formula B memilikikadar protein yang lebih tinggi dari formula A. Namun, formula A memberikan kecerahan dan warna kuningyang lebih tinggi. Formula A memberikan OAC yang paling rendah, walaupun WAC-nya sama denganformula lain.
