Los productos destinados a consumo humano y animal deben cumplir una serie de requisitos higiénico-sanitarios previos a su comercialización con la finalidad de garantizar su inocuidad. La histamina es un compuesto producido por la descomposición de aminoácidos que se ha establecido como un parámetro ampliamente analizado en productos del mar, debido a que, si excede los límites establecidos en la normativa del Codex Alimentarius, puede causar efectos dañinos en la salud.
