Plusieurs contraintes naturelles, culturelles ou historiques balisent le développement de la gastronomie québécoise. Au territoire vaste se juxtapose la rudesse de l’hiver ; aux pratiques ancestrales des Amérindiens se sont confrontés les modes de vie des colons français et britanniques. Pour le dire de manière plus directe, l’alimentation québécoise est, entre autres, tributaire du climat, donc des restrictions imposées par le long hiver, et des vagues migratoires qui ont ponctué l’histoire...
