PréambuleLe corpus de cette étude est (provisoirement) limité aux photographies des mets créés par Michel Bras, et qui ont été publiés dans Bras, ouvrage consacré à sa cuisine, à ses recettes, mais aussi à son lieu de vie, où il accueille ses hôtes, à l'équipe qui l'assiste dans son travail, et à l'Aubrac, son pays et son environnement 2 .Certes, ce ne sont que des photographies, et non les mets eux-mêmes, mais elles rendent parfaitement compte de la mise en espace de chaque composition : toutes cadrées en faible plongée, à la même distance, elles adoptent le point de vue du dégustateur, au moment où il se penche sur son assiette.En outre, en tant qu'artefact de second degré, la photographie opère une réduction à laquelle le dégustateur aurait bien du mal à se résoudre devant le mets lui-même : la réduction du mets à sa seule dimension visuelle.
