Abstract
Dans un contexte de médicalisation de l’alimentation et de responsabilisation des industriels et des consommateurs et consommatrices quant aux supposés méfaits de certaines pratiques alimentaires sur la santé, cet article constitue une proposition de formalisation des décalages entre, d’un côté, les attentes d’une entreprise agroalimentaire apposant sur ses produits des messages supposant une composition plus favorable à la santé, et de l’autre, les formes d’appropriation qui en sont faites dans les familles. Articulant les approches de la socio-anthropologie de l’alimentation (Poulain, 2002) et de la sociologie de la traduction (Callon et al., 2006), nous procédons à la catégorisation et la description de ces écarts observés à partir d’entretiens et d’observations participantes effectués entre 2018 et 2019, en entreprise, en supermarché, et au domicile de familles. Ces décalages, plus ou moins importants, témoignent de l’espace de liberté dont disposent les familles au sein d’un système dans lequel les entreprises agroalimentaires sont émettrices de messages relatifs aux normes du « bien manger ».
