Abstract
Cette étude analyse le processus de spécification de la figue sèche des At Maouche. Les résultats montrent que les figuiculteurs adoptent une stratégie intégrée de valorisation patrimoniale et marchande de la ressource. En s’ouvrant à l’extérieur, ils s’insèrent dans des réseaux d’acteurs qui leur permettent d’articuler leurs savoirs de proximité aux savoirs réflexifs exogènes et aux savoirs managériaux d’organisation. Cependant, la durabilité de ce processus semble difficilement généralisable du fait qu’il est essentiellement porté par des acteurs exogènes et qu’il n’est pas véritablement approprié par les figuiculteurs.
