Abstract
El objetivo de este estudio fue evaluar la calidad postcosecha de frutos de frambuesa (Rubus idaeus L.) var. Chilliwack y Heritage almacenados con altas concentraciones de CO2 y bajo nivel de O2. La fruta fue cosechada según el color del fruto y su facilidad de desprendimiento de la planta, en la VI región, Chile. Una vez seleccionada, se envasó en pocillos plásticos con tapa perforada de 160g de capacidad, que fueron colocadas en bandejas de cartón para 12 pocillos. Las bandejas fueron trasladadas en cajas de poliestireno con hielo envasado para mantener la temperatura baja durante el transporte de la fruta. El almacenaje de la fruta y las evaluaciones se realizaron en el Centro de Estudios de Postcosecha de la Universidad de Chile. La fruta se almacenó en atmósfera controlada (AC) con 15, 18 y 21% de CO2 en combinación con 5% de O2, además de un testigo en aire (0,03% de CO2 y 21% de O2). Las evaluaciones se realizaron luego de 14 y 21 días bajo AC a 0ºC y 90% HR, y después de 2 y 4 días a 10ºC en atmósfera normal, como período de aduración. Los parámetros evaluados fueron: color (L*, C* y Hab), apariencia, pérdida de peso, incidencia de pudriciones, resistencia del fruto a la presión, desórdenes fisiológicos, pH, contenido de sólidos solubles (CSS), acidez titulable (AT) y la relación CSS/AT. Adicionalmente, se obtuvo la tasa respiratoria (mg CO2 kg-1 h-1) y la tasa de producción de etileno (μL C2H4 kg-1 h-1) de frutos en atmósfera normal a temperaturas de 0, 5 y 10ºC. Para frutos de ambas variedades, la AC generó efectos positivos sobre su conservación al disminuir la tasa respiratoria y la incidencia de pudriciones. Las concentraciones de 18 y 21% de CO2 con 5% de O2 mantuvieron la calidad de las frambuesas durante 21 días.
