1)醤油製造における原料のうち, 脱脂加工大豆中からは0.088 mmol/kg程度のD-Gluが検出されたが, 割砕小麦, 種麹からは検出されなかった。生揚げ醤油からはD-Asp, D-Glu, D-Ser, D-Ala, D-Leuの5種類が合計で4.053~4.591 mM程度検出された。
