Abstract
Tujuan penelitian ini adalah untuk mengetahui besarnya nilai tambah yang diperoleh dari pengolahan kedelai menjadi produk tahu, tempe dan susu kedelai pada salah satu industri di Aceh, khususnya di Kabupaten Pidie Jaya yaitu pada CV. Shuya Fadhal. Analisis nilai tambah yang digunakan yaitu dengan menggunakan rumus perhitungan metode Hayami. Data diperoleh dari wawancara secara langsung dengan pemilik industri CV. Shuya Fadhal. Data tersebut kemudian diolah dalam bentuk analisis. Hasil penelitian diketahui bahwa keuntungan pemilik perusahaan atau nilai tambah bersih yang lebih besar terdapat pada produk olahan susu, kemudian disusul dengan produk tahu dan tempe yaitu dengan nilai masing-masing sebesar 96,96%, 95,59% dan 80,53%. Hasil yang diperoleh tersebut menunjukkan bahwa untuk olahan susu pada industri CV. Shuya Fadhal memiliki prospek tertinggi untuk terus dikembangkan disamping olahan dalam bentuk tahu maupun tempe. Industri CV Shuya Fadhal diharapkan dapat mengembangkan variasi rasa dari susu kedelai yang diproduksi, sehingga konsumen lebih tertarik lagi untuk membeli dan mengkonsumsi minuman susu kedelai selain yang awalnya dengan rasa alami/asli, juga dapat mencoba dalam varian rasa lainnya, hal ini juga untuk menghindari timbulnya rasa bosan konsumen dalam menikmati minuman susu kedelai.
