À travers une approche qui s’appuie sur les représentations, cet article propose une exploration historiographique des discours produits sur l’identité culinaire québécoise, entre les années 1930 et les années 1990. Soulignant l’importance, durant cette période, du champ du culinaire dans la quête d’une identité canadienne-française, puis québécoise, il s’attarde sur les inventaires de recettes de cuisine à travers lesquels se distinguent deux discours qui entrent en tensions contradictoires autour de représentations différenciées de la tradition culinaire : alors que le premier, produit par les folkloristes puis par les ethnologues, tend à documenter une tradition menacée par la modernité, et dont il faut garder la trace pour faire référence culturelle commune, le second, produit par le milieu gastronomique et hôtelier, s’attache à l’idée d’une tradition vivante, recréée par l’innovation, et susceptible de produire des retombées socio-économiques pour les métiers et les territoires.
