Le secteur de la restauration a été grandement affecté par la crise sanitaire et continue d’avoir des difficultés à attirer et retenir sa main-d’oeuvre. Basé sur une recherche comparative entre la France, l‘Italie et le Québec, cet article vise à montrer comment la normativité ordinaire qui prévaut dans ce secteur a été malmenée par la crise sanitaire dont les conséquences continuent, encore aujourd’hui, de se faire sentir. Dans les trois contextes, la restauration repose en grande partie sur ce que nous appelons des « régimes de mobilisation flexible » de jeunesses qui, si elles expérimentent un accès à l’autonomie selon des modalités différenciées, ont en commun de consentir aux conditions de travail et d’emplois du secteur dans le cadre de rapports sociaux entre générations reproduits au coeur même du travail. La crise sanitaire et la gestion gouvernementale qui en a résulté ont toutefois contribué à déséquilibrer les modes de fonctionnement du secteur. Le soutien apporté aux entreprises et aux salarié.es s’inscrit dans un référentiel normatif qui a fait ressortir le caractère atypique du système salarial de la restauration et a contribué à déstabiliser les régimes de mobilisation flexible qui tendent à prévaloir dans le secteur.
