Abstract

The use of agrochemicals in agriculture has its benefits, such as increasing the yield and protecting against crop diseases. However, these organic compounds can contaminate food, which can lead to many human and animal health issues as well as environmental concerns. The objectives of this chapter are to introduce pesticides (herbicides, insecticides, and fungicides) in terms of their biological activity and use, explain the negative effects of contaminants with regard to human health, determine methods used to measure these pesticide residues in foods, describe national and international regulations regarding pesticide residues , explain processes that can be used to reduce pesticide residues in grains , and explain the measures taken (from a regulatory standpoint) to minimize such contaminants in food.
