Abstract
Can food be an attractor and a contributing factor for tourism development in remote island destinations? In this chapter, we look at three different examples in the North Atlantic and discuss their similarities and differences, and their contribution to the development of tourism in those locations. The examples are NOMA in Copenhagen and its contribution to making the Nordics a culinary destination, the opening of Fogo Island Inn on Newfoundland, and KOKS and its effect on the Faroe Islands and Greenland. Results explore the need to develop and support islands to be culinary destinations.
